RECIPE: Chickpea Salad Sandwiches

So this is an easy way to prep your lunches ahead of time. First you make the “chickpea salad” in a food processor, then you create your own sandwich with fresh ingredients. It’s really that easy. Hope you enjoy 🙂

Chickpea Salad Sandwiches
Serves 4

Ingredients for Chickpea Salad Sandwich
2 cans chickpeas, drained and rinsed
1/2 ripe avocado
2 tbsp vegan mayo (or use whole avocado)
1 small red onion peeled and chopped into large pieces
2 ribs of celery cut into 1 inch chunks
salt to taste
1/2 tsp black pepper
1/2 tsp turmeric
2 tbsp apple cider vinegar
multigrain bread/gluten free bread/bread of choice
Optional but Highly Advised Toppings:
Dill pickles (I used the “bread n butter” type)
Spinach/kale/lettuce
Tomatoes
Sprouts
Shredded carrots

Instructions
1. In a food processor, pulse all ingredients except bread until the chickpeas have broken down but still have texture. The celery and onion should be finely chopped. Add extra seasonings to taste and pulse again. Layer inside of toasted multigrain bread with toppings of your choice. I used spinach, tomatoes, sprouts, and pickles. Can be stored in the fridge for 3 to 4 days.
